After going vegan, I had a really hard time finding pancakes that were free of dairy. They all had egg whites or buttermilk. Even the healthier alternatives had dairy! I found one by Aunt Jemima without dairy products, but the label said, “May contain traces of egg and dairy”.

Ugh! I know there are many recipes to make your own pancakes, but I didn’t have one ready and I was with my whole family.

Later that day, we were at a Burlington store. We were just browsing and I saw a package that said “organic pancake mix.” I immediately walked down the aisle and picked it up. I couldn’t believe it! Dairy free pancake mix!

Being raised in the average American household, I always ate the SAD diet: the Standard American Diet. This diet includes anything you can afford: meat, cheese, candy, processed foods, white grains, fast food, whatever your heart desires. It wasn’t until recently I began thinking about going vegan.

A little over a year ago, I came across a book called ‘The Abs Diet’ by David Zinczenko. Reading this book was the first time I ever made a connection with the things we eat and our quality of life. Then, I bought a book called ‘The Daniel Plan’ by Pastor Warren and got hooked.

Since then, I’ve been studying nutrition like never before and realizing that we don’t have to eat whatever is in front of us. We have the ability to choose our meals and our health.

Blueberry Banana Oatmeal Recipe

This blueberry banana oatmeal recipe tastes so good. Not only does it taste good, but it is good! Oatmeal contains fiber and protein. Blueberries and bananas are rich in antioxidants. Another thing I love about this meal is how filling and cost-effective it is. You can get a big container of old fashioned rolled oats for less than $5!

My family absolutely loves this meal. There’s no doubt in my mind, this recipe is a great way to start the day!

A few things to keep in mind about this recipe:

  1. You can replace the almond milk with another milk or water. However, make sure you follow the directions on the package (or use 2 cups water per 1 cup rolled oats).
  2. If you are swapping out certain ingredients, you may have to add another tablespoon of maple syrup as a sweetener.

Spanish Rice Recipe (Arroz Con Gandules) | Vegan | Healthy

I grew up in a Spanish home and Arroz con Gandules (Spanish rice) was always on the menu. It was a staple in our home and we never grew tired of eating it. When my health journey began, I learned that the traditional Spanish rice recipe I had known was bad for your health.

For example, white rice is bad for humans. You can probably imagine how shocked I was. The stuff I ate my entire life was actually detrimental to my health. How could this be? However, the good news is brown rice is good for you. By making this simple switch, I turned an unhealthy meal into a healthy one.

Another concerning issue about Spanish rice is the use of vegetable oils. These oils are very bad for you. Again, I switched to coconut oil and the health threat went away.

Apple Cinnamon Oatmeal Recipe | Vegan | Healthy | Homemade

Although oatmeal is certainly one of the most healthy foods for you, there are many companies that offer processed, less nutritious forms of oatmeal. Because of my family’s desire to eat real, wholesome foods I had to figure out how to make healthy homemade oatmeal. This apple cinnamon oatmeal recipe is easy to do and only takes about 10-15 minutes to make.

Once I figure out this recipe, I’ve been cooking it ever since! Oatmeal is a great way to start your day. It contains 4 grams of fiber & 6 grams of protein per cooked cup. It’s filling and there are many different flavors you can create. Plus, you can get a big container for less than $5.

A few things to keep in mind about this recipe:

  1. Maple syrup could be replaced with a pinch of stevia extract
  2. Walnuts can be replaced with pecans.
  3. Cinnamon can be replaced with pumpkin spice.
  4. Although 2 cups water per one cup oats is recommended, always check the back of your oat’s container for that company’s recommendation.
  5. If you have extra chopped nuts or apples, sprinkle on the end result for tastier oatmeal.

Fitness Planner Free Printable

I remember being at a store and looking at all the different journals they had. I’m a writer and I love a good journal. Then, I found a fitness planner. It was great and I wanted it so bad! But then, I saw the price. It was around $20! And I certainly did not have that money on me. Usually, I go to Ross and buy me a really nice $5.00 journal from there.

Anyway, I went home and thought of a solution. “Why don’t I make my own fitness planner?” I thought. So I did! I really enjoy using it so I figured other people would too!

Fast Food Nation by Eric Schlosser Changed My Life – Here’s How.

Fast Food Nation by Eric Schlosser was absolutely amazing! I haven’t read a book like this in a while. And by that I mean, a book that I could not put down and be totally consumed by. This book completely transformed my life! I became a vegetarian literally overnight and shed many tears while reading.

I certainly was not planning on giving up meat. But once you learn the truth about the meat and fast food industries, you will find it so difficult to continue to support these huge corporations that don’t care about your health or quality of life. Please keep in mind that this book was published in 2001. Therefore, many things in this book may have changed since then.
