After my family decided to switch to a plant-based diet, my husband was really craving some meat. We jumped into veganism for great reasons but had close to no knowledge about what foods to switch to.

I started supplying our kitchen with the basics: brown rice, beans, seasonings, whole wheat pasta, spaghetti sauce, etc.

Since I was constantly doing research, I learned that tofu was something a lot of people ate in their diets. The texture was great and there are many recipes out there to learn from.

Chinese Fried Rice Recipe | Vegan

This Chinese fried rice recipe is one my family has enjoyed time and time again. Although it tastes just like the real stuff, you know exactly what’s in it.

To make this dish healthy, I use brown rice instead of its refined counterpart white rice. Most Chinese rice contains a scrambled egg that gives it a greater taste and texture. But since this is a vegan recipe, I omitted that ingredient.

Therefore, this recipe contains whole grain, vegetables, and some seasonings. Sounds great to me!

Things to keep in mind about this recipe:

  • You can replace the coconut oil with vegan butter. It would probably work better since the coconut oil evaporates so quickly.
  • You need to use chilled brown rice, which means cooking it ahead of time and storing it in the fridge. I usually cook mine the previous day so it’s ready for me. However, you can cook it and put it in the freezer for around 20 minutes. Just be sure it doesn’t freeze!

This blueberry banana oatmeal recipe tastes so good. Not only does it taste good, but it is good! Oatmeal contains fiber and protein. Blueberries and bananas are rich in antioxidants. Another thing I love about this meal is how filling and cost-effective it is. You can get a big container of old fashioned rolled oats for less than $5!

My family absolutely loves this meal. There’s no doubt in my mind, this recipe is a great way to start the day!

Spanish Rice Recipe (Arroz Con Gandules) | Vegan | Healthy

I grew up in a Spanish home and Arroz con Gandules (Spanish rice) was always on the menu. It was a staple in our home and we never grew tired of eating it. When my health journey began, I learned that the traditional Spanish rice recipe I had known was bad for your health.

Although oatmeal is certainly one of the most healthy foods for you, there are many companies that offer processed, less nutritious forms of oatmeal. Because of my family’s desire to eat real, wholesome foods I had to figure out how to make healthy homemade oatmeal. This apple cinnamon oatmeal recipe is easy to do and only takes about 10-15 minutes to make.

Once I figure out this recipe, I’ve been cooking it ever since! Oatmeal is a great way to start your day. It contains 4 grams of fiber & 6 grams of protein per cooked cup. It’s filling and there are many different flavors you can create. Plus, you can get a big container for less than $5.

A few things to keep in mind about this recipe:

  1. Maple syrup could be replaced with a pinch of stevia extract
  2. Walnuts can be replaced with pecans.
  3. Cinnamon can be replaced with pumpkin spice.
  4. Although 2 cups water per one cup oats is recommended, always check the back of your oat’s container for that company’s recommendation.
  5. If you have extra chopped nuts or apples, sprinkle on the end result for tastier oatmeal.
